Our Estate Cabernet
Sauvignon is a classic Bordeaux blend consisting of 80% Cabernet Sauvignon, 12%
Merlot, 6% Cabernet Franc, and 2% Petite Verdot. The Cabernet Sauvignon vines
that produce this wine are approximately 40 years old, dry-farmed, low-yielding,
and of historic clonal selection. The combination of clonal pedigree, infertile
shale soils, water stress, meticulous farming, and old-world winemaking results
in a wine with complexity, depth, and a lean structure.
The wine displays a
vibrant, saffron-red color in the glass. Aromas are intense, featuring black
currant, olive, and sage, with subtle meaty undertones and a hint of black
pepper spice. On the palate, it is lively, offering dark berry and savory
herbal notes. The finish is smooth and refined, with chalky tannins
complemented by hints of blackberry and vanilla.
Built to age
gracefully and reward those with patience. Cellar for 2 to 5 years to develop
structural harmony and expect it to continue evolving over the next 20 years
and beyond.

2021 was a historic drought year,
with only 12.75 inches of rain--the lowest we have ever recorded. The previous
record was set in 2014, with 14 inches. This limited rainfall can positively
impact wine quality, resulting in smaller grape berries that produce highly
concentrated and complex wines. The Cabernets from 2021 are undoubtedly
concentrated, quite Bordeaux-like, and have the potential to age very well.
